Simple Spinach Lasagna

I've been wanting to try a spinach lasagna for a while, and this recipe is delicious.

1 T olive oil
1 10-0z package frozen chopped spinach
1/2 onion, chopped
1/2 tsp dried oregano
1/2 tsp dried basil
2 cloves garlic, crushed
1 32-0z jar spaghetti sauce
2 c ricotta
8 oz mozzarella, shredded
1/4 c parmesan, grated
1/2 c chopped fresh parsley
1 tsp salt
1/8 tsp pepper
2 eggs
8 oz lasagna noodles, cooked

1. Preheat oven to 350 F

2. In a large pot over medium heat saute spinach, onion, oregano, basil, and garlic in the olive oil. Pout in spaghetti sauce; simmer 20 min. In a large bowl mix ricotta, mozzarella, parmesan, parsley, salt, pepper, and eggs.

3. Place a small amount of sauce in bottom of a lasagna pan. Place a layer of noodles on sauce. Spread half of the cheese mixture on the noodles then cover with some sauce. Place another layer of noodles and cover with remaining cheese and half of remaining sauce. Layer with the final noodles and cover with remaining sauce. Top with mozzarella cheese.

4. Cover with foil and bake in preheated over for 55 minutes. Remove foil and bake another 15 minutes. Let sit 10 minutes before serving.
